Avocado Bean Salad

You cannot go wrong with this full meal salad! You got your healthy fats, plant-based protein, and starchy vegetable! It's a must try!


2 avocados (perfectly ripe and cute into cubes)

1 can of pinto beans (you can use your preferred beans)

1 4.5 oz can cut green chiles pepper

1 cup frozen organic sweet corn (thawed)

1 cup chopped grape tomatoes

Dressing: 1/8 cup olive oil, 1/8 cup lemon juice, 1/s tsp salt, 1/2 tsp garlic powder

1) Mix all your salad ingredients in a large bowl

2) Make your dressing on the side. The best was is to use a bottle or container with a lip/cap, add your dressing ingredients and put on the top, then shake until it's one consistency.

3) Add as much dressing as you desire and Enjoy!!

Yup its that easy!

Keep in mind avocados easily brown! If you are making this for later you can add the avocados when you are ready to eat or pour the dressing on the avocados alone and give them a quick stir and then add the remainder of the ingredients over the avocados and do not stir until ready to eat! By covering the avocados with the other ingredients you'll lessen their exposure to air and slow down their browning.
