Fiber-Rich Muffins

longer! These muffins are packed with fiber thanks to the banana, date paste, semolina, pistachios, and sunflower seeds! Worried about the sugar content? 3 eggs
1 cup coconut oil
1 cup almond milk
1 cup ripe banana, mashed
1 cup date paste
2 cups fine semolina
1 tablespoon baking powder
1 tablespoon vanilla powder
½ cup pistachio, crushed, unsalted
½ cup sunflower seeds, unsalted
1- Preheat the oven to 350 F. Grease each cup of two standard 12-cup muffin pans and set aside.
2- Beat the eggs into a large bowl. Beat in the coconut oil and almond milk until combined. Beat in the mashed banana and date paste until combined.
3- Mix in the semolina, baking powder, and vanilla powder until just combined. Mix in the
pistachios and sunflower seeds.
3- Divide the batter evenly into the two prepared muffin pans, filling each cup ⅔ full.
4- Bake the muffins for 15 minutes or until a toothpick inserted in the middle comes out clean.
5- Remove the muffins from the oven, and allow them to cool for 5 minutes before serving. Enjoy!
