Okra Stew Recipe
This is a great one (instant) pot recipe that’s fairly easy! Serve it with a side of jasmine rice and enjoy!

Ingredients:
1 lb lamb or beef chunks (you can also substitute with ground meat rolled into meatballs as shown in the picture)
14 oz frozen mini okra- usually one bag (the smaller the okra the less slimy they get when cooked!)
3oz tomato paste- about 3 tablespoons
2-3 medium sized garlic cloves
3 cups broth
3 tablespoons of pomegranate concentrate or lemon juice (add more if desired)
1/4 cup coarsely chopped cilantro
a dash of salt, pepper, and allspice
A drizzle of olive oil
Directions:
You can cook this in any pot, however, the instant pot will just be quicker.
-Set instant pot to sauté and add in a drizzle of olive oil with your meat and a dash of each salt, pepper, and allspice.
-Cook for ten minute or until you get a nice browning on the meat. Add in your frozen okra, stir gently and cook for an additional 5 minutes.
-Add in your tomato paste and garlic and give it another gentle stir.
-Lastly add in your broth, pomegranate concentrate, and cilantro. Cover your instant pot and keep sealed. Cook for 15 minutes on the meat/stew setting.
-Garnish with fresh cilantro and enjoy!
